Nothing is uploaded.
Conversion, scanning, signing and text recognition all run locally through Apple's PDFKit, Vision and Core Graphics frameworks. There is no server to send a document to, no account to attach it to, and no analytics SDK watching which tool you opened. That is why the App Store listing carries the “Data Not Collected” privacy label — the app has nothing to declare.
